GRILLED ONION SOUBISE

INGREDIENTS

1/8 cup all purpose flour

2 cups Half & Half

1 small yellow onion

1 teaspoon salt

2 oz butter

DIRECTIONS

1. Heat a medium saucepan and add the butter.

2. Introduce the flour to the butter, one spoon a time.

3. When all the flour is blended with the butter (roux), set it aside to cool a little.

4. Add the warm milk to the flour slowly.

6. Halve the onion and brush with olive oil.

7. Put the onion on the grill until blackened.

8. Use the inner onion petals for planting, use the outer petals and blend with B├ęchamel in blender.
